I once read something, somewhere, that if you make things from scratch, then you can have as much of it as you like. Don’t quiz me on this. I read it, I retained it and now I live by it. These peanut butter-stuffed dates, or Snickers dates, as they are sometimes known, are the perfect example. Super quick and easy to make, they taste delicious and you made them yourself so feel free to eat them standing up by the open fridge door, no plate necessary.
You’ll need:
- 10 medjool dates, pitted
- ¼ cup nut butter of your choice
- 3 ½ ounces dark chocolate, melted
- coarse sea salt
Break open the dates slightly and fill the insides with nut butter. Piping with a pastry bag helps keep it neat. Using a spoon means you’ll have a spoon to lick at the end.
Gently push the dates closed.
Coat the dates evenly in dark chocolate until fully coated and set on a parchment paper lined baking sheet.
Sprinkle the dates with sea salt.
Let firm up in the fridge until the chocolate is set before enjoying.
These should be stored in the fridge and consumed in whichever manner you choose.
