As summer draws to a near end, we’re making the most of delicious, naturally sweet fruit from nature's larder. This peach cobbler is essentially a little cooked fruit with masses of crunchy, sweet crumble topping - arguably, the best bit of any crumble.
Best served warm, with a dollop of custard, ice cream or crème fraîche. It’s a great crowd pleaser and simple to put together.
Here’s how you do it:
- slice 4-6 peaches
- stir 2 tbsp cornflour with juice from 1 lemon, and pour over sliced peaches
- into a bowl combine 2 cups oats, 2 cups flour, 1 cup sugar, 1 tsp salt, 2 tsp cinnamon & mix
- add 1 cup butter & bind into a crumble mix using your fingertips
- pour over peaches & bake for 45 minutes at 180°
