Earl Grey Lemon Drizzle

 Beyond just filling your mugs, the team at Good & Proper also love to get creative with the teas. Here they share their twist on an easy Lemon Drizzle recipe for a sunny afternoon with friends. Delicious, and best enjoyed with a cup of tea. Naturally.

Earl Grey Lemon Drizzle Recipe

What you’ll need:

For the cake

  • 125g unsalted butter
  • 175g caster sugar
  • 2 large eggs
  • zest of 1 lemon
  • 175g self-raising flour
  • Pinch of salt
  • 4 tablespoons of whole milk
  • 2 Earl Grey tea bags or 2 tablespoons of Earl Grey leaves

For the syrup

  • juice of 1 1/2 lemons
  • 100g icing sugar

Method:

  1. Preheat your oven to 180ºC/160ºC fan/gas 4

  2. Butter and line with greaseproof paper a 2lb loaf tin

  3. Put milk in a small pan with Earl Grey tea over a medium heat and bring to a gently simmer, then turn off and set aside to infuse and cool for at least 30 mins. The longer the better for more flavour so this can even be done ahead of time!

  4. Cream butter and sugar together, then add lemon zest and eggs, beating together well.

  5. Gently fold in the flour and the salt.

  6. Add milk and mix thoroughly.

  7. Spoon batter into your prepared tin and bake for around 45 minutes or until a skewer comes out clean.

  8. Next, make your syrup by putting the lemon juice and icing sugar into a saucepan and heat gently until the sugar has dissolved. (Note: If you want even more Earl Grey flavour to come through you can also add an Earl Grey tea bag at this stage too so the syrup too infuses the flavour - let it infuse a few minutes, then remove)

  9. As soon as the cake is out of the oven, poke holes all over it and then pour over the syrup.

  10. Leave the cake to completely cool before removing from tin.

Feel free to decorate with a small slice of lemon or two on top. Serve with a cup of tea and enjoy!
