We’re always looking for delicious snacks to get us through a busy week. This super simple 3-ingredient radish toast smacks of spring and is yummy, fresh and super simple: exactly how we like our lunches here at Piglet.
Salt flakes and chives to garnish
Pop your sourdough into the toaster whilst you finely slice some lovely radishes. We’ve used French Breakfast radishes as their elongated shape looks like beautiful petals but feel free to go with whatever is available. There are some great bags of mixed radishes available at most supermarkets at the moment and there are even mild varieties which are great for the little ones. Or how about trying to grow your own to double the fun? Seeds are super cheap and easy to find and my kids grew a bunch in an old bucket!
Top the toast with a generous smear of butter (buuuuuutter....) then carefully layer the delicate slivers of radish. A sprinkle of salt flakes and chopped chives and voila! Easy, super quick, and definitely delicious.
And why not add some crumbled feta and mixed seeds and serve with a green salad to make an effortless dinner party starter or light lunch?
