Sometimes you just need a cookie in your life. A gooey, chewy, melty cookie to enjoy by yourself with a good rom-com. Step in the single serve cookie recipe. 15 minutes, minimal effort and one perfect cookie. Just for you.
2 tbsp plain flour
1/4 tsp baking powder
2 tbsp soft brown sugar
2 tbsp melted butter (you can use coconut oil if you'd rather be dairy free)
3 tbsp chocolate chips of your choice
1 tbsp full fat (or almond) milk
1/8 tsp vanilla extract
pinch of salt
1. Mix all the ingredients together and form into a large cookie shape. Place on a baking parchment lined tray and bake for 10-12 minutes at 175C.
I like using dark chocolate chips and sprinkling my cookie with sea salt flakes rather than adding the salt to the batter, but you can also use M&Ms, chopped up chocolate chunks or nuts if you fancy it.
