Salads are absolutely not just for summer. This jewel toned beauty really showcases seasonal apples and is quickly whipped up for a bright, working from home lunch.
1 bunch of radicchio
Handful of toasted pumpkin seeds
A couple of radishes
For the dressing:
1/2 cup olive oil
1 finely chopped shallot
1/3 cup champagne vinegar
1 tbsp dijon mustard
1 tbsp honey
A few cracks of black pepper
Mix all the dressing ingredients together until emulsified
Lay out the radicchio leaves on a plate and drizzle with some of the dressing making sure it gets into all the nooks and crannies
Finely slice the apple and radishes, add to the plate and top with more dressing.
