Starting with a must-try iced coffee, to a classic pimms, a zingy watermelon and lime cocktail and finishing with a classic mojito! There’s a recipe for every summer’s day, perfect for your next get-together or lazy afternoon.
We shared this recipe with you not that long ago and it has been on repeat for many of us at Piglet, especially when enjoying the warmer weather. It's an extra indulgent coffee, with the additions of honey and chocolate. If you want to spoil yourself even more, top with a dollop of think cream or ice cream before topping with the chocolate.
Iced coffee (serves 1)
2 ounces brewed espresso
- 1 tsp honey
- 3/4 cup steamed milk of your preference
- dark chocolate shavings
- a dash of cinnamon
Fill a glass with a few ice cubes and add the espresso and honey, mix till combined - Add the steamed milk next with the foam layer on top
Finish with chocolate shavings and a sprinkle of cinnamon
Pimms is a quintessential British summer drink with a tradition that spans almost 200 years. With notes of strawberry, cucumber and mint, it is a classic that is enjoyed by many. The addition of fresh peach here makes it the perfect summer drink to sip on and you’ll probably have all the ingredients in your cupboards already.
Pimms Cocktail (makes 1 jug)
- 60 ml Pimms
- 10 ml lime juice
- sparkling water
- sliced cucumber
- edible flowers
- red currants
- strawberries and peach slices
Add all the ingredient into a jug, mix well and enjoy!
Watermelon and lime cocktail
Cool down with this fresh watermelon lime cocktail. Everyone will love the contrast of pretty-in-pink watermelon and zesty punch from the lime to give this cocktail the perfect mix of sweet and spicy. This is the perfect crowd pleaser that could easily be made into a jug cocktail for a group.
Watermelon and Lime cocktail (serves 1)
- 2 ounces vodka or rum
- 3 ounces fresh watermelon purée
- Juice of half a lime
- 1 tsp agave syrup or honey (optional)
- Sparkling water
Add all the ingredients expect the sparkling water into a cocktail shaker and shake.
Pour into your favourite cocktail glass and top it off with seltzer (sparkling water) and enjoy.
Mojito fans will agree that this light, zesty yet punchy cocktail is a popular summer classic for a reason. The combination of sweet, citrus and herbaceous mint complement the rum flavour, making this a sophisticated and refreshing classic that will transport you to a Cuban sandy beach!
Mojito Recipe (serves 1)
- Half a lime, cut into four slices
- 1 tsp granulated sugar
- small handful mint leaves, plus extra sprig to serve
- 1.5 measures of white rum
- soda water, to taste
Muddle the limes, sugar and mint leaves in a sturdy glass or small jug, crushing the mint as you go. Pour into a tall glass and add ice right up to the top of the glass.
Pour the rum over the ice, stirring with a long-handled spoon. Top up with soda water, garnish with mint and serve.
