Breakfast Granola

We love making a big batch of granola for breakfasts and snacks throughout the week. It makes mornings much more relaxed and the whole family find it delicious. In fact this a great one to get the kids involved with making, letting them select their favourite ingredients to incorporate and then serve with fruit to get one of their 5 a day in straight away.

Here is our favourite recipe which is nutty, sweet and delicious and helps you feel energetic all the way up to lunch and is completely made up of pantry staples.

 

INGREDIENTS:

1 cup raw mixed nuts, roughly chopped

3/4 cup coconut flakes

3 cups rolled oats

3 tbsp sesame seeds

2 tbsp cacoa nibs

2 tbsp chia seeds

2 tbsb ground flax seeds

1/2 tbsp salt

 1/2 cup honey or agave syrup

1/2 cup neutral oil

1 tbsp vanilla extract

 

METHOD:

Mix all the ingredients together until well combined.

Spoon out onto an oven tray lined with baking parchment and press down well with the back of a wooden spoon. Then into a pre-heated oven at 180°C/350F until beautiful golden and toasted (usually about 25 to 30 minutes). Give it a stir about halfway through cooking to ensure it browns evenly.

Leave to cool then break up gently into granola clumps. It stores nicely in a jar or airtight container.

Serve with natural yoghurt, milk or just on its own for a crunchy snack.
